How to Reheat Neapolitan Pizza (Without Ruining It)

Neapolitan pizza is best eaten straight from the oven — blistered crust, gooey cheese, perfectly balanced toppings. It's pizza perfection in its prime. But let’s face it, sometimes we over-order (no regrets), or someone doesn’t finish their share (seriously?!). If you find yourself with leftover slices, the good news is they can still be delicious the next day… if you reheat them properly.
Here’s how to bring your Neapolitan pizza back to life — without ending up with a sad, soggy mess.
❌ First, What Not to Do
Let’s get this out of the way: don’t microwave it. Unless you enjoy chewy crusts and limp soggy toppings, the microwave is not your friend. Neapolitan dough is soft and airy with a light char — the microwave turns that magic into mush.
🔥 Best Way #1: The Air Fryer (My Personal Favourite)
Quick, easy, and surprisingly perfect.
No preheating needed
Place slice in the basket (don't stack!)
180°C for 3 minutes
The result? A crispy bottom, melty cheese, and warm toppings. It’s dangerously close to tasting freshly made.
🔥 Best Way #2: The Oven
Reliable and still gives great results.
Preheat oven to 180–200°C
Place slice directly on the rack or a preheated baking tray
Heat for 3–5 minutes, just until the cheese starts to melt again
Be careful not to overcook it — too long and you’ll dry out the dough and lose that Neapolitan charm.
🔥 Bonus Tip: Frying Pan Method
If you’ve got a few extra minutes, a skillet on the stovetop also works beautifully.
Heat a non-stick or cast-iron pan over medium
Place your slice in and cover with a lid
Heat for 2–4 minutes until the base crisps up and the cheese softens
This method gives you a crispy crust and warm toppings without the risk of drying everything out.
