Four days behind the scenes at Pizzata
Ever wondered what it really takes to make great Neapolitan pizza day after day? Spend four intensive days learning the craft with the team at Pizzata, from mixing and fermenting dough through to stretching, topping, baking and serving.
This is a hands-on experience designed for people who want to go beyond making pizza at home. You will spend time learning directly from our team in the Pizzata deli, getting involved in the day-to-day process and picking up the practical skills and little tricks that come from making a lot of pizza.
By the end of the four days, you will have the knowledge, confidence and hands-on experience to make traditional Neapolitan pizza yourself.
Day 1: Dough Master Workshop
Your apprenticeship begins on Sunday 21 February, 10.30am –3pm with our Dough Master Workshop, where you get to grips with the foundation of great pizza: the dough.
You will learn how to make Neapolitan pizza dough by hand, understand the role of flour, water, yeast, salt and fermentation.
You will also see a demonstration of high-hydration dough being made in a mixer, along with the techniques we use to handle wetter doughs.
The course covers the fundamentals of stretching, topping and baking, giving you a solid foundation before you move behind the counter at Pizzata.
Days 2–4: Learn in the Pizzata Deli
For the following three days, you will work alongside our team in the Pizzata deli.
Monday 22 February | 9.30am–4.30pm
Your first day in the deli is all about getting hands-on with the day-to-day preparation and pizza-making process. You'll work alongside our team learning how we manage dough, prepare toppings, stretch bases and get everything ready for service.
Tuesday 23 February | 9.30am–4.30pm
Continue developing your pizza-making skills with more hands-on time in the deli. You'll work on consistency, speed and technique while learning how a professional pizza operation runs behind the scenes. Become familiar with traditional pizza toppings and get creative coming up with your own signature pizza.
Wednesday 24 February | 11.30am–8.30pm
Your final day brings everything together. You'll spend the afternoon preparing for service before putting your skills into practice at our Tuscan Wine Dinner.
You'll be part of the team making and serving pizzas for the evening, working in a real service environment and seeing how everything you've learned comes together.
It's a pretty special way to finish four days immersed in pizza, Italian food, wine and hospitality.

Wednesday 24 February | 11.30am–8.30pm: Hands-on training and making and serving pizza at our Tuscan Wine Dinner, with the opportunity to taste the evening's beautiful Chiantis
Investment $2,500 per person (only 2 places available)
This is intentionally a small, personal training experience. You won't be one person in a large class watching from the back. You'll be working directly with the Pizzata team, asking questions, getting your hands in the dough and learning by doing.
